View Full Version : Vegetarian lasagna anyone?

I was wondering if any of you had any good vegetarian lasagna recipes? I've been looking for ages, but I can't seem to find one that really does it for me. I'd just rather make it than buy it from the frozen section (and maybe I can get my husband to eat it to! hehe) :p

Do you eat eggs?

Cause I make mine with Quorn, which contains egg whites. You can find it in the frozen foods section. I just substitute the mince for qourn and use any regular lasagna recipe. No meat-eater will be abe to tell the difference!

We made veggie lasagne in italy lasy year-

We used aubergine (eggplant) as the main ingredient, and then some other veggies like courgettes peppers and stuff as well.

Then layer it like normal, probably seasoning with plenty of salt n pepper!

We normally make it with sauted veggies, like lots of sliced small mushrooms, spinach and the like. it comes out reeeAAAAAALY good!

That does sound super good. Thanks for the suggestions, especially the eggplant...I haven't used that yet and I don't know why. I love it so much!

Squash and zucchini, boiled first. Perhaps some spinach, really well-boiled carrots, or brocoli. I had a friend who would do a layer of hummus in her's, too.

Oh man, I could see hummus being either really grose, or really great.

Yeah, I love hummus- but, hmmm I might have to do that when I'm feeling adventurous
