Beleive it or not, ladies; this cake is Vegan, Fat Free, Moist, and Scrumptious!
I made this for my birthday this past March, instead of opting for a Grocery Store sheet cake! It is especially delicious with Hazlenut Coffee, or a spiced tea. I'm trying to remember this off the top of my head, so, forgive me.
You may need to give or take how much applesauce you need, depending on how thick or thin your mixture gets. If it's thin, add a bit more flour and sweetener. If it's thick, add a bit more applesauce. It shouldn't be runny, but a little thick and sticky, like muffin batter.
Ingredients!!
*2 cups of flour (I use Whole Wheat)
*1 cup of sweetener (This can be sugar, Maple Syrup, Mollasses, Splenda, What-have-you. I use a Splenda equivalent.)
*1 cup of Applesauce (I use unsweetened)
*1/4 cup Unsweetened Cocoa Powder
*2 teaspoons Vanilla Extract
*1 teaspoon of Cinnamon
*1/2 teaspoon Nutmeg
*1/2 teaspoon Cloves, ground
Optional Additions (Choose one, or all!):
*1/2 Cup of Dried fruit
... Raisins, Chopped Dried Apricots, etc.
*Powdered Sugar for Dusting the cake
How to Make it:
Preheat your oven to 325 degrees fahrenheit, while you mix your batter. Start by sifting all your dry ingredients, then slowly mix in your apllesauce bit by bit. Scrape the batter into a Bundt (or regular cake) pan, either greased or sprayed with PAM for Baking. Place the Cake in the oven, and bake for fifty minutes to an hour, before checking on it. If you can insert a toothpick in the center, and pull it out clean, then it's all finished!
Serve warm in generous slices. ^^ Dress it up with a scoop of Vanilla icecream to melt on top.
