View Full Version : Quick N' Easy Berry Sorbet!

I love this recipe to death, especially on hot New England Summer afternoons. I snatched it from Sarah Kramer's La Dolce Vegan (http://www.amazon.com/Dolce-Vegan-Livin-Made-Easy/dp/1551521873/ref=pd_bbs_sr_1/102-2358349-6050543?ie=UTF8&s=books&qid=1185799912&sr=8-1), an awesome book with delicious recipes I dug up at Border's.

The recipes is, of coarse, Vegan, and calls for soy milk, but I'm only Vegetarian, so I just use skim milk. However, I bet this recipes is the BOMB with fat-free Vanilla soy milk (from 8th Continent; I love it on my cereal.).

[x] 2 cups Mixed Frozen Berries (Your Choice; I reccommend Raspberry.)
[x] 2 tbsp Maple Syrup, or other sweetener*
[x] 3/4- 1 cup "milk" (varies by desired consistency.)

Mix and blend together the frozen berries and sweetener in a food processor or blender. While the foodprocessor is running, add milk. (This can be tricky with a blender; foodprocessors should have a spout for adding this sort of thing. I suppose you could stop the blender, and it'll work. ) Add the milk slowly, 1/4 cup at a time, until desired thickness is reached. Serve immediatley, or place in freezer to harden (no more than an hour, or it'll be hard as a rock!)

*= Many vegans choose to abstain from refined sugar, because the filters it's sifted through are made from charred animal bone.

While I still drink milk, I practice this, and don't eat refined sugar at all. (I also refuse to eat eggs, but that's another story.)

yum! i'll have to try this(with my mom as i'm rather hopeless in the kitchen) with our blender XD(that'll be fun ha ha) you're a vegan lavendre? i'm only a quasi-vegetarian ^^; i still eat chicken and fish(though not lately...i keep sleeping through dinner!) thanks for the recipe!
