2 cups all purpose flour
2 tsp ground ginger
1/2 tsp baking powder
1/2 tsp salt
12 tbsp unsalted butter(room temperature)
3/4 cup dark brown sugar
1/2 tsp vanilla
1/4 cup chopped crystallized ginger

in medium bowl combine ginger(ground), baking soda, flour, and salt, set aside. then in another medium bowl beat the butter and brown sugar with an electric mixer until mixture is light(about 2 minutes?). then beat in the vanilla. stir in flour mixture, and then finally add crystallized ginger. squish together into a ball, and wrap up in plastic. it needs to be refridgerated for at least a few hours, you can do overnight if you like.
heat oven to 350 degrees. line baking sheet with parchment paper(found in baking aisle at most grocery stores). lightly flour a surface(not the parchment), and roll dough out, the thickness of the dough should be about a half an inch. a 2-3 inch star cookie cutter works, or you could cut out shapes with a knife and be creative. place cookies on parchment paper on the baking sheet, make sure they are about 1 and a half inches apart. bake 10-12 minutes, or until cookies are lightly browned around the edges. put on wire racks to cool.
